The phoenix would burn you,the scales of the dragon would be hard to get a grip on,so it all comes down on the gryphon.

You can put saddles on a Dragon! And I would LOVE to ride all of them!!!

Ever heard of the DragonKnights? They rode dragons and existed in all times as time-travelers, in order to keep evil at bay.

I'd be wary about riding a dragon - it takes a lot longer to form a bond with them (unless you were magically bonded with them like Eragon). A griffin's trust and friendship bond is formed through fighting together, and saving each other. I would imagine a dragon's trust would be through a hoard of precious stones. :/
