~Broiled and peeled بینگن ترکاریاں, سلاد ~
This is my most favourite salad. I could eat tones of this stuff, especially in the summertime cause I can use fresh eggplants (the canned ones are no good !)
You'll need : * eggplants * sunflower oil * 1 small پیاز * نیبو, لیموں رس, جوس * salt * garlic * tomatoes
1.First, the eggplants need to be broiled on the stove, on open flame. Also, آپ can grill them on electrical stove until the insides become very soft.
2. After removing them from the grill, let them cool off, in a covered bowl for 10 min. After that, rinse them (with cold water) and آپ skin them / peel off the skin . :)
3.Cut the tail and remove part of the seeds (not all), the ones that just fall of. The eggplants need to
be very well drained before آپ start working with them.Cut them in half and put them on a plate یا a cuttingboard, sprinkle some salt on them and let the juices drain for about 1 hour.
4. After they are completly drained (if not, those juices can make them bitter) mash them up with a wooden knife, a wooden spatula کے, گوندھنے یا a plastic one. It is important not to be inox یا iron, because the eggplants get کڑوا, تلخ as well :)
5. Put them in a bowl, add salt (if needed) and some نیبو, لیموں juice. Pour the sunfloweroil little سے طرف کی little, stirring continuously, with a wooden spoon until it becomes like a paste,it changes the colour a bit
and it almost doubles the volume. The quantity of oil is entirely up to you.
6. In the end add fine chopped پیاز یا garlic. آپ can also add mayonese and serve the ترکاریاں, سلاد with tomatoes and روٹی of course !
