Demons/monsters still would have come after Sam & Dean eventually. (especially Sam) .. and they would have had NO idea what was going on & gotten killed/hurt/whatever.

Well, it depends. If he only knew that there'd be an apocalypse linked to the two being hunters, he'd obviously change his mind. If he knew that raising them in hunters actually played into Azazel's plans, that'd be another reason to take a different path. But if he knew the full details/knew Sam had already been infected with demon blood, maybe he'd decide that raising them to hunt could give them a better fighting chance.
